Oatmeal Walnut Chocolate Chip Cookies

Or, "Oatmeal Chocolate Chip Cookies" (if you leave out the walnuts!).

Ingredients:
1 cup butter, softened
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla extract
1 1/4 cups flour
1/2 tsp baking soda
1 tsp salt
3 cups quick cooking oats (I used the old-fashioned, not quick-cooking kind, and it was fine)
1 cup chopped walnuts (optional)
1 cup semisweet chocolate chips

Directions:
1. Preheat the oven to 325 degrees.
2. Cream together the butter and both sugars until smooth.
3. Beat in the eggs one at a time, then stir in the vanilla.
4. Add in the flour, baking soda, and salt. Stir until just blended.
5. Mix in the oats, walnuts, and chocolate chips. 
6. Drop by heaping spoonfuls onto a cookie sheet sprayed with cooking spray.
7. Bake for 12ish minutes. Cool on wire racks.
8. Eat with a glass of milk! Mmmm!

  1. YUMM!! I would replace walnuts with raisins. But my hubs told me he doesn't like raisins in cookies. Oh well. These look wonderful. I want some right now!
