Mini Caprese Bites

Thank goodness it's finally Friday. I needed Friday this week.

Here's another yummy recipe that would be fun to munch on at a Super Bowl party! They look fancy, and they're so easy to make!

Ingredients:
1 pint cherry tomatoes
1 bunch fresh basil leaves
8 oz fresh mozzarella
Olive oil, for drizzling
Balsamic vinegar, for drizzling

Directions:
1. Cube the mozzarella (or cut the spheres into quarters). Halve the cherry tomatoes. Tear the basil into small pieces.
2. On each toothpick, put a piece of mozzarella, then basil, then a tomato. You want the flat side of the tomato to be even with the end of the toothpick so it will stand up straight.
3. Before serving, drizzle them with the olive oil and balsamic vinegar.

Easy-peasy.

SO MANY! They all got gobbled up though!
Note: this was before they were drizzled with the oil and vinegar... I didn't get a chance to take photos when they were totally done!
