Honey Glazed Carrots

These carrots are a delicious and easy side dish! I rarely make complicated side dishes (I tend to focus on whatever main dish I'm doing), so these are nice and simple and perfect. I love to serve them with Honey Garlic Pork Chops. So yummy!

Ingredients:
1 1/2 to 2 pounds baby carrots
3/4 tsp salt
3 tbsp butter
2 tbsp honey
3 tbsp packed brown sugar
juice from 1/2 lemon
freshly ground black pepper (optional)
Directions:
1. Rinse carrots and put them in a medium saucepan. Fill saucepan with enough water to cover the carrots. Add salt. Bring to a boil, then reduce heat to medium-low and cover. Cook on medium low, covered for 15 minutes, or until carrots are tender. Drain. 
2. In a skillet, melt butter over medium heat. Add honey and brown sugar and cook (stirring constantly) until sugar is dissolved. Add lemon juice and stir in the carrots. Stir until all carrots are coated, then continue cooking until carrots are hot and glazed.
3. Garnish with ground black pepper and serve!
