Mini Sugar Cookie Fruit Tarts
Boy oh boy. These little morsels are so addicting! And as far as desserts go, they're healthy, right? Anything with fruit on top = healthy. :) Regardless, they're just delicious and cute and simple, perfect for parties/showers/whatever, and I love them!

Ingredients:
1 tube of sugar cookie dough
1 8oz block cream cheese, softened
16 oz Cool Whip
assorted fruit (strawberries, kiwis, blueberries, whatever!)
Directions:
1. Separate cookie dough into 48 small balls and place them in two mini muffin pans. Bake at 350 for 6-7 minutes. When cookies come out of the oven, use the end of a wooden spoon to poke and deflate the centers slightly (giving you that tart shell shape).
2. When cookies have cooled for a few minutes, pop them out of the pan and let them finish cooling on a wire rack.
3. Mix the cream cheese and Cool Whip until well-combined to form frosting. Use a large Ziploc with a hole cut in one corner to pipe the frosting into each tart shell.
4. Chop fruit and arrange on top of each tart.
Ready for the oven!
