Candy Cane Biscotti

Here's another fun Christmas recipe, perfect for Christmas morning with coffee or tea, or as an addition to your Christmas cookie repertoire! My mom (who knows her biscotti) ate a couple and said "This is what biscotti is supposed to taste like!" so I think it's a pretty good recipe. :o)

Ingredients:
1/2 cup unsalted butter, softened
1/2 cup sugar
3 large eggs
2 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
8 candy canes, crushed
(optional) White chocolate for drizzling
(optional) extra candy canes, crushed for garnish

Directions:
1. In a large bowl, combine flour, baking powder, and salt. Set aside.
2. In a stand mixer, combine butter and sugar. Beat at medium speed until creamy. Beat in eggs. Gradually add the flour mixture and beat on low speed until just combined.
3. By hand, stir in the crushed candy canes.
4. Divide the dough into fourths on a lightly floured surface. Shape each fourth into a log, about 9 inches long and 1-2 inches wide. Place the four logs on a lightly-greased large cookie sheet.
5. Bake at 350 for 18-20 minutes, or until the tops of the logs are cracking and the ends just start to turn light brown.
6. Remove the logs from the oven and reduce the oven temperature to 325. Leave the logs on the cookie sheet for ten minutes to cool.
7. Place logs on a cutting board and cut into 1/2-inch slices with a sharp, serrated knife. Put the slices back on the cookie sheet, cut-side down. Bake in the 325-degree oven for 12-14 minutes, flipping them over once halfway through. Cookies should be lightly browned and crisp on both sides when done. Cool on a wire rack.
8. (optional) Melt the white chocolate and drizzle over the biscotti. Sprinkle crushed candy canes on top.

(After this, I drizzled them with melted white chocolate and sprinkled them with crushed candy canes. I'm so upset I forgot to take a picture of them totally finished, but you can just picture it!)
