Here's a perfect chocolate muffin recipe for you! With semisweet chocolate, dark chocolate, and baking cocoa, they're really yummy and chocolately without being too sweet (definitely a muffin, and not a cupcake)!
Recipe adapted from here.
Ingredients:
2 1/4 cups flour
1 cup sugar
3/4 cup baking cocoa
1 1/2 tsp baking soda
1/4 tsp salt
3 eggs
1 cup sour cream (the light version is fine)
1/2 cup water
1/2 cup milk
1/2 cup canola or vegetable oil
1 tsp vanilla
1 cup semisweet chocolate chips
1/2 cup dark chocolate chips
Directions:
1. Combine flour, sugar, cocoa, baking soda, chocolate chips, and salt in a large bowl. Mix until combined.
2. In a separate bowl, whisk together the eggs, sour cream, water, milk, oil, and vanilla. Stir this mixture into the dry ingredients until just moistened (don't overmix!!).
3. Prepare a muffin pan with paper liners. Fill each cup 2/3 full with the batter.
4. Bake at 325 for 16-18 minutes. Cool on a wire rack.
